
Feta-style brine cheese is a soft white cheese of sheep's, goat's or cow's milk ripened and kept in brine, dense but crumbly, slightly friable, salty, with a clean sour-milk taste and a moderate sharpness. It is cubed into Greek salad, crumbled onto vegetables, watermelon, pasta and pizza, baked in foil with olive oil and herbs and served with flatbread and olives.
