
Fenugreek cheese is a semi-hard cheese of cow's or goat's milk with ground or crushed fenugreek seeds added (a Dutch-style fenugreek cheese type), light yellow with brownish flecks, dense, elastic, with a mild creamy taste and the characteristic sweetish-nutty, slightly maple-curry note of fenugreek. It is sliced for open sandwiches and cheese boards, put into sandwiches, with apples, nuts and wine.
