
Dextrose (glucose, grape sugar) is a white crystalline powder of a simple sugar, less sweet than sucrose (about 70%), quickly absorbed and highly soluble, hygroscopic. In confectionery it lowers the freezing point of ice cream and sorbets, gives softness, prevents crystallisation in caramel, fondant and ganache and is used in sports nutrition and in curing meat.
