Lanzhou Lamien Noodles

Lanzhou Lamian is a legendary dish of Chinese cuisine from Gansu province. It is a true art that requires skill in preparing the dough, stretching it, and shaping it. The thin, silky strands of noodles create an amazing texture, while the rich beef broth infuses them with the aroma of spices and fresh herbs. A distinctive feature of the dish is the addition of raw slices of beef that cook in the hot broth, giving the soup a rich flavor. Daikon and spinach add a light freshness, while cilantro and green onions provide spicy notes. This is not just noodles but a culinary heritage that conveys the spirit of Chinese tradition where each serving is prepared with care and respect. Lanzhou Lamian symbolizes mastery, harmony of flavors, and love for gastronomy.

Tamagoyaki
TamagoyakiJapanese cuisine | Breakfast

Tamago-yaki is a traditional Japanese omelet prepared in a special way. Its history dates back to the Edo period when Japanese chefs began experimenting with egg preparation. Unlike regular omelets, tamago-yaki is made by layering and rolling the egg mixture, giving it a unique texture – tender, airy yet firm. The flavor of this dish is rich and slightly sweet due to the addition of mirin and soy sauce. Carrots and green onions add freshness and a slight crunch, while dashi enhances the depth of flavor. Tamago-yaki is served cut into neat pieces, often with grated daikon that adds a refreshing spiciness. This dish is perfect as a standalone snack or as an accompaniment to a traditional Japanese breakfast.

White Cabbage Kimchi

I tried to buy Chinese cabbage for this kimchi (this is a traditional Korean recipe), but it was all of poor quality. So I made quick kimchi from regular white cabbage. If you start from the fact that kimchi is a type of dish, then it doesn’t matter what kind of cabbage you put in it. I’ve made kimchi from both Brussels sprouts and cauliflower. The special thing about cabbage kimchi is that you need to cook rice flour porridge with it. It won’t affect the taste, but it will allow this aromatic spice mixture to stick to the cabbage properly. Otherwise, everything can drip to the bottom of the dish, and the point is for the mixture to coat the product.

Tuna fried with vegetables is a harmony of Mediterranean cuisine where juicy fish meets the freshness of vegetables and the sophistication of sauces. Tuna sealed with furikake spices and grilled to perfection retains its tenderness inside while the crispy crust adds textural richness. Crunchy daikon, refreshing cucumber, and creamy avocado create a balance of flavors complementing the lightness of the fish. Two types of sauce—aromatic saffron mayonnaise and citrus-soy mix—add depth to the dish by blending spicy and sweet-sour notes. This dish is perfect for a light yet rich dinner that evokes memories of the gentle Mediterranean breeze and sunny evenings by the sea.
