Black food colouring is a concentrated colouring in the form of a gel, paste, powder or liquid (based on activated charcoal, plant pigments or a mix of permitted food colourings), giving a rich black colour without a pronounced taste. It is added by the drop to dough, cream, glaze, fondant, macarons, ice cream, jelly and drinks for a black and graphite colour and 'dramatic' decoration.

Anton Negin, brand pastry chef of the Cape restaurant, shared the recipe with us.
