
Burbot is a freshwater fish of the cod family with a long body, smooth slippery skin without large scales, white firm low-fat meat of a sweetish taste and almost no small bones, but with a very large fatty liver that is a delicacy. It is fried, baked, braised in cream and milk, cooked into a rich fish soup and the famous burbot liver, made into cutlets, souffle and aspic.
