
Bonito dashi stock (katsuo dashi) is a Japanese base stock of an infusion of kombu seaweed and shavings of cured smoked bonito tuna (katsuobushi) in hot water, light golden, clear, with a delicate smoky-marine taste and a deep umami without a pronounced fishiness. It is used as a base for miso soup, clear soups, udon and soba noodles, tsuyu and teriyaki sauces, braised dishes and tamago omelette.
