
Balsamic glaze (crema) is balsamic vinegar reduced to a thick syrupy consistency (often with added sugar or a thickener), dark brown, glossy, with a concentrated sweet-sour taste. It is drizzled over bruschetta, mozzarella with tomatoes, carpaccio, strawberries, ice cream, roasted vegetables, steaks and cheeses and used to draw patterns on the plate.
